Ingredients:
2 cups grated coconut
1 onion, chopped
2 tomatoes, diced
2 green chilies, slit
1-inch piece of ginger, grated
4 garlic cloves, minced
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
A few curry leaves
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish
Directions:
Heat oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter.
Add cumin seeds, curry leaves, chopped onions, green chilies, grated ginger, and minced garlic. Sauté until the onions turn golden brown.
Add diced tomatoes and cook until they turn soft and mushy.
Now, add grated coconut to the pan and mix well. Cook for a few minutes until the coconut starts to release its aroma.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix everything together.
Add water as needed to adjust the consistency of the curry. Bring the curry to a gentle simmer and cook for about 5-7 minutes.
